Global Picklist help

We currently have several picklist that we need to convert over to global picklist. The challenge I'm having is that I need to change all old records without losing data. Some picklist that were available previously are no longer available and will not be included in the new global list. Any suggestions on the best way to accomplish this?

Step 1 : You go to picklist field --> Edit it and Click on -->  Promote to Global Value Set--> save
