Hello Anupama@28

are you using SAML for SSO or certificates for any other purposes??.
You can create new certificate and assign it to my domain and delete the exising expired one.

I have a self-signed certificate that i don't see an option to delete. It's coming up on my org Health Check, but there is no option to delete it. I'm not sure why this is, since I could delete the certificate that it was created to replace.

You can't delete a cert if it's the chosen cert under "Setup > Identify Provider".  So, you can go to that screen and switch to the new cert.  Then the expiring one can be deleted.
