Hi Melissa,

If you want to move the salutation field before contact name then,  If the Name field on the object is a Text type, which is what I see here, then it's not possible to move it from the first position without going through the Force.com IDE to edit the XML metadata of the list view directly. If the Name field on the object is an Auto-Number type, then you can remove it from the first position of the related list from the interface.
OR
Do you want to remove the action field? As far as I know, you cannot simply remove/hide those. You can either removed Edit, Delete permission to that object from profiles OR you need to override the Edit and Delete button using VF page.
