Disabling Experience Site Cookies

I've been trying to use this LWC cookie consent modal from Salesforce labs and everything appears to be working except for the ability to decline all cookies. 

When I call the JS method to set the expiry date on the cookies, it appears to remove some of the cookies and there are still plenty that have an expiration date in the future, which would lead me to believe that they are still active.

Are there certain cookies coming from the Experience site or Salesforce that we would be unable to deactivate? Is there any documentation on which cookies are coming from Salesforce and what they do?

Salesforce doesn’t currently provide functionality for end-user cookie consent management in Experience Builder Websites (https://filehare.com/). The platform is compatible with many existing third-party solutions. I recommend that you work with you internal IT teams or consult your implementation partners to identify the right solution for your organization’s needs.
