How do I change the name of the Birth Date field on the Contacts page to a different field name?

Hi Maree,
You can override the label by using "Rename Tabs and Labels".
Please follow the below steps:
Got to Quick find Search, search for Rename Tabs and Labels, click on Edit Contact and Click Next and update the field label and Save the changes.
