From experience I have found that interviewers utilizing “show me” tactics in interviews are not companies you want to work for.
It’s not just you that locks up it is anyone who is asked a super specific configuration question that they haven’t worked on recently or at all.
Be weary of those companies that utilize those types of interviews. The best companies i have interviewed with have given me a scenario and given me a few days to build a solution in a dev org and then present it in an interview.
If you really want your beat shot at answering config cotcha questions then just study the salesforce documentation on limitations and standard functionality. Hope this helps and good luck.
Last thing, search linked in for the person you are backfilling or if it is a net new position find a former employee and reach out on linked in and ask them about their experience. Glassdoor is a good resource too as sometimes interview questions are posted on there.
Here are a few questions i have been asked in interviews:
1. What is the limit for workflow field updates per object.
2. How do you automate case/lead assignment.
3. what is the difference between roles and profiles.
4. Name all Standard report types.
5. What is the difference between a permission set and profile.
6. What is the difference between record types and page layouts and when should you use each one?
