I don't think eclipse supports field deletion. I once tried removing the field definition from the Object in Eclipse and then saving to server. But it didn't worked. Maybe syncing with server will work but I am not sure about that. Apart from that I can't think of any efficient way of deleting fields.
Infact this can go as a good idea. Selecting fields you want to delete and then delete them in one go. It would be really efficient.
