Help with deploying change sets

We just deployed a change set from one of our sandboxes to another and ran into a problem.

 

After we deployed the change set on our new sandbox, every single custom field for every object we have was set to be hidden. We manually reset most of them via "Field Accessibility" but they are still not showing up on our enterprise WSDL. 

 

Does anyone know what we can do about this issue?

So far the best solution we've found is to edit the .profile record in the Eclipse IDE then update it to the server. There are several components that this still doesn't work for, e.g. tabs etc. Thoughts, anyone?

Until Change Sets support profile permissions, using the Force.com IDE or Force.com Migration Tool for Ant are the best approaches for migrating these settings between environments.
