Generally we customize when the features exposed by salesforce or in your case- sales order object when the requirements are not fully met by the standard features. In order to bridge the gap in the requirements we resort to customizations.
Well in case you are using ecllipse there you can see alll the objects used in a salesforce org alternatively you can go to the setup are see all the objects present in a salesforce org.
In order to create field in any object go to the object field listing page in the setup.
Setup:-
Appsetup:- Create:- Object :- Then your object (there you will see the field listing ) // this for custom object
