Ordering Based on Product

We have many types of products listed in salesforce and I would like to create an 'Orders' custom object that has fields which would vary per product that was chosen. I would like to do this declaritively if possible but not sure how to approach it. Can I do it using record types somehow? If so how would I do that? If not how would you do this?
