Sum Total Opportunities Value for an Account

Is is possible to sum the Total OPEN Opportunities for an account?

Yes, I do this.  On the account module, create  a new roll-up summary field.  Your Summarized Object should be Opportunity, Type would be SUM, pick the field you want to sum up under "Field to Aggregate". 
 
Under criteria, be sure to list which opportunities you would like to include (much like a report).  For example, we sum up all opportunities that are still open, so I made sure to remove the closed opportunities in the filters.
