I got the info from https://na1.salesforce.com/help/doc/en/salesforce_mobile_implementation.pdf

For iPhone and iTouch devices, tap Settings on the device's Home screen, then scroll down and tap Salesforce. Tap
Transport URL, then tap Sandbox. Tap the back arrow twice to exit the Settings page. Open Salesforce Mobile. Enter
the username and password for your sandbox account, then tap Activate.

How can this be done for Android devices?

It took me a bit of time but... just click the native menu button on the android device and select "Change Server".

To change the login host on Android
1. Tap the Menu icon on your Log In page.
2. Tap Change Server.
3. Optionally, select Production or Sandbox.
4. Tap the Add Connection button.
5. Enter a name for the new instance.
6. Enter the host name URL of the new instance. (Include https:// in the host name.)
7. Tap Apply.
8. Tap the name of the newly created instance.
9. Tap Apply, then log in.

Last I checked today (Sept 2018) for iPhone, sai.sf's post is already obsolete.

The current way to login to sandbox on iPhone is to:

  1. Go directly to Salesforce1 app
  2. Settings on top right
  3. Choose Sandbox
  4. Login via App
  5. Done
