Hi -
I'm new to SF and Force, and not a developer, and not great with Databases...... and i sure do miss that I can't see a visualization of the relationships I'm making with my objects!
Is it just because I'm an amateur or do you folks wish we could see a diagram of what we're working on too?

An E-R style diagram and ideally editor would indeed be very useful, even for power users. Even just a static diagram of the base CRM objects would be useful -- I sketched one out on paper.
Also very powerful for Query.

Try using CloudERD app for iPad, it will allow you to create ERDs of any standard and custom objects in your Org.
