I would like to get the Contact phone number on associated Opportunities? How can i get it?

Create a custom field that's being filled with a trigger that fires onInsert/Update for the Opportunity. I think you can also use a formula field on that, but since I'm more on the development side of things and less on the administrative side, I'm not sure about that :).

You can also do this using workflows rules field update from parent object to child object as per your description, opportunities is the child object to Contact. Please review the documentation on how to create the workflow rule https://help.salesforce.com/HTViewHelpDoc?id=customize_wf.htm&language=en_US
