If I understand your question to mean "What is there to do for work in the Service Cloud as a developer?" than the answer is, the same as in Sales Cloud or any other management system. Some things cannot be done with declaritive programming and must be done with triggers, apex, visualforce. Depends on the complexity of the service organization. I exclusively work in the service cloud and there is never a lack of work for me to do in my organization.
