I wrote a blog post about this by watching wire traffic from your server to SF: http://scotthung.wordpress.com/2014/11/10/how-to-check-the-https-security-protocol-used/ The short of it is to do a tcpdump (or equivalent program on your server) and use wireshark to exam the traffic. As they say "PCAPs don't lie" :-)
