I'm currently working on customizing the Quotes template using VF since the standard configurations don't meet the clients requirements. However right now I'm stuck.

Hey you wnat the record created date or Pdf generated date ? If Quote created date then you can pull Created Date field if you wnat Quote created date pull System.Today in to a outputText in VF from class .
