OWD sharing rules

I have two profiles "Sales Executive" and "Sales Manager" whenever I the "Sales Executive" creates a record by the OWD sharing rules the record is by defalut visible to the "Sales Manager" profile.What If one of the particular record created by the sales Executive should not be availble to Sales Manager without changing the OWD settings? Please help

If the object have a open OWD model such as public read only or public read write. Then I dont believe you can restrict the visibility at a record level completely.

To change the record level visibility you have to adjust Organization-wide default in Salesforce. By any other feature, you can't restrict record access. All other options are used to open up the access not restrict. 

As you mentioned, you are using sharing to share the  records created by Sales Executive" to "Sales Manager". just tweak your sharing rule to skip  rule for some record.

For example,
1. Create a checkbox on object called as "Skip__c", set default value True
2. Modify the Sharing to include, Skip__c to true
3. Ask Sales Executive, if they don't to share some record then uncheck Skip__c checkbox
