I just want suggestions on the following things regarding the deployments from one production org to another production.

1) What would be the better way to do prod -prod  deployment ..change sets? packages? IDE? to handle the metadata,profiles and other components....

2) what are the best practices?

I have an object "Table" and it has 500 fields in it. I need to clean up this object.

How can I find which field is never used out of 500 by user so that I can remove it?
